Umami Sustainable Seafood produces and supplies sashimi-grade Northern Bluefin Tuna to the global market. We produce and distribute healthy seafood of unrivaled quality, satisfying the world’s growing appetite for high quality seafood, with a clear focus on sushi and sashimi restaurants.
Our growth strategy is based on consolidation within the sector, to leverage scientific process and research knowledge through economies of scale.
We catch and grow sashimi grade Bluefin tuna commercially in aquaculture farms located in Croatia and Mexico. We own and operate Kali Tuna, an established Croatian-based aquaculture operation, raising Northern Bluefin tuna in the Croatian part of the Adriatic Sea. We also own and operate Baja an established Mexican-based aquaculture operation, raising Pacific Bluefin tuna off the northwest coast of Baja California, Mexico.
Our objective is to create a farm environment where the tuna spawn and the resultant eggs are hatched and grown to full size.
Although we have achieved some successes in the area of spawning and hatching, we believe that commercialization of this propagation program is still a number of years away. Although, we do not believe that our success is reliant on the success of the propagation program, it is expected to enhance our long- term prospects.

Kali Tuna:
Located near the city of Zadar, Kali Tuna d.o.o. is a Croatian-based aquaculture operation raising Northern Bluefin Tuna in the unique environs of the Adriatic Sea. Established in 1996, Kali Tuna operates four concessions with 32 cages where Bluefin tuna is grown year round.
Baja Aqua-farms:
Located off the shores of Baja Mexico, near the city of Ensenada. Established in 2001, Baja Aqua-farms S.A. de C.V. operates three concessions consisting of over 60 cages where Bluefin tuna is grown year round.
